Make these!

You won't regret it. This is by far the most delicious muffin I've ever made. Now, if you don't like them, don't judge me. Because, if you know me, you know I'm always trying to put wheat flour instead of white, less sugar, and applesauce instead of oil, which makes for healthy but not so delicious muffins. I didn't do such a thing with these, however... and they were quite tasty. So give 'em a try when you're in the mood -- I promise you will not be disappointed!

Banana Crumb Muffins














INGREDIENTS

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter

DIRECTIONS

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
  2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
  3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

What IS this deliciousness?!?!






As a household rule, any time there is opportunity to dress Claire up and make her adorable... we do it. Halloween was no exception. She was a Gund Snuffles bear, and a darn cute one at that.

I dressed up like a haggardly mom (um, ok I actually DIDN'T dress up, just turned out that way) and my friend Leslie was a HOUSEWIFE, which was my idea. And yes, it is funny if you know her. And please don't be offended, because I'm not.. and that would be lame.

Now, let me just say this about on-base trick or treating: nightmare. Claire was afraid of the doorbell ringing and she cried every time. So we went to visit friends while Tom handed out candy. At first Claire wasn't too keen on trick or treating either, until she figured out when she walked up to someone, she got a yummy treat. She was having just as much fun as the other kids.. and probably ate way too much candy even though we only did ring 3 doorbells! After only 2 hours of a nightmare, thankfully we got rid of all 10 bags of our candy. I might have helped a little too... with the Snickers... and peanut M&Ms... but that's all... and the 3 Muskateers. THAT'S IT!
